👩🍳 How to make Bedai MP
- Prepare dough: Mix whole wheat flour, oil, ajwain, salt. Rub oil in thoroughly. Add warm water and knead into a medium-soft dough. Rest 15 minutes.
- Make stuffing (5 mins, medium heat): Dry roast urad dal paste in a pan until moisture evaporates. Add cumin, ginger, chillies, fennel, chilli powder, salt. Mix well. Cool.
- Shape bedai: Make 10 dough balls. Flatten each, fill with 1 tbsp stuffing, seal and roll into 8cm rounds.
- Fry (15 mins, medium heat): Deep fry in oil at 165°C, pressing gently with a spoon to puff them up. Fry 4–5 minutes each side until crisp and golden.
- Serve: Hot with aloo sabzi and chutneys.
