👩‍🍳 How to make Balushahi

  1. Mix ghee into maida until crumbly. Add baking soda. Add cold water just enough to bring dough together (do not knead). Shape into rounds with a shallow depression in center.
  2. Fry in ghee/oil on very low heat (140°C) — balushahi must cook slowly. Fry 15–18 minutes, turning gently, until pale golden and cooked through. Do not rush — high heat makes them raw inside.
  3. Make syrup to two-thread consistency. Dip fried balushahi in warm syrup. Set on rack to cool.
  4. Garnish with pistachio slivers.
