👩🍳 How to make Arbi Masala
- Boil arbi cubes in water for 8 minutes until half-cooked and tender outside; drain
- Heat oil to 70°C in large pan
- Add cumin seeds; crackle 10 seconds
- Add chopped onion; sauté 2 minutes until softened
- Add ginger and green chili; cook 30 seconds
- Add turmeric and asafoetida; stir 10 seconds
- Add boiled arbi cubes; toss gently for 2 minutes to coat
- Add chili powder and coriander powder; toss 1 minute
- Add amchur powder; stir for 30 seconds
- Add 100ml water and salt
- Increase heat to high, cook uncovered 5–8 minutes until water reduces and arbi becomes golden and crispy at edges
- Stir occasionally to ensure even cooking
- Finish with coriander leaves
- Serve hot
