👩‍🍳 How to make Arbi Masala

  1. Boil arbi cubes in water for 8 minutes until half-cooked and tender outside; drain
  2. Heat oil to 70°C in large pan
  3. Add cumin seeds; crackle 10 seconds
  4. Add chopped onion; sauté 2 minutes until softened
  5. Add ginger and green chili; cook 30 seconds
  6. Add turmeric and asafoetida; stir 10 seconds
  7. Add boiled arbi cubes; toss gently for 2 minutes to coat
  8. Add chili powder and coriander powder; toss 1 minute
  9. Add amchur powder; stir for 30 seconds
  10. Add 100ml water and salt
  11. Increase heat to high, cook uncovered 5–8 minutes until water reduces and arbi becomes golden and crispy at edges
  12. Stir occasionally to ensure even cooking
  13. Finish with coriander leaves
  14. Serve hot
