  1. Make puri dough, roll, fry in hot oil until puffed and golden.
  2. Temper mustard and cumin in oil. Add chillies and ginger. Add mashed potatoes with all spices. Cook 5 minutes on medium heat, adding ¼ cup water. The bhaji should be slightly dry and chunky.
  3. Serve hot puris with aloo bhaji.
