👩🍳 How to make Aloo Poha
- Temper (2 mins, medium heat): Heat oil, add mustard and fennel seeds. When they pop, add curry leaves and chillies. Add onion, sauté until soft (3 minutes).
- Add potatoes (3 mins, medium heat): Add boiled potato cubes, toss gently until lightly golden.
- Add poha (4 mins, low heat): Add seasoned poha, fold gently. Cover and steam 2 minutes. Each grain should be soft and separate.
- Serve: Garnish with coriander, sev, and lemon juice.
