- Heat oil (160°C), add cumin seeds (crackle 10 sec).
- Add onion, sauté 1.5 min until translucent.
- Add turmeric and chili powder, stir 20 sec.
- Add tuna cubes, cook 3 min stirring occasionally (fish should turn opaque white).
- Add grated coconut, toss for 1 min to warm.
- Add curry leaves, cook 15 sec.
- Sprinkle lemon juice and salt, toss once. Visual cue: Fish flakes easily, coconut coats mixture, no liquid.
- Serve hot.
