  1. Rinse rice, add to pot with water (medium-high heat, 180°C).
  2. Bring to boil, reduce heat to low (150°C), simmer 12 min stirring occasionally.
  3. Rice should be soft and porridge-like, liquid absorbed.
  4. Heat coconut oil separately (160°C), fry onion for 1 min.
  5. Add tuna flakes, cook 30 sec.
  6. Add curry leaves, remove from heat.
  7. Mix tuna mixture into porridge, season with salt and pepper.
  8. Visual cue: Creamy, speckled with tuna, light aroma of fish.
  9. Serve hot in bowl.
