- Rinse rice, add to pot with water (medium-high heat, 180°C).
- Bring to boil, reduce heat to low (150°C), simmer 12 min stirring occasionally.
- Rice should be soft and porridge-like, liquid absorbed.
- Heat coconut oil separately (160°C), fry onion for 1 min.
- Add tuna flakes, cook 30 sec.
- Add curry leaves, remove from heat.
- Mix tuna mixture into porridge, season with salt and pepper.
- Visual cue: Creamy, speckled with tuna, light aroma of fish.
- Serve hot in bowl.
