👩‍🍳 How to make Tapioca Upma

  1. Soak tapioca pearls in water for 30 min, drain well.
  2. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  3. Add cumin seeds, fry 10 sec.
  4. Add curry leaves, fry 15 sec.
  5. Add onion and green chili, cook 1.5 min until soft.
  6. Add tapioca pearls, stir constantly for 4-5 min until pearls become translucent and lightly fried. Visual cue: Pearls swell, become sticky-looking, caramelized edges.
  7. Add salt, toss once.
  8. Serve hot.
