👩‍🍳 How to make Tamarind Chutney

  1. Soak tamarind paste in warm water (60°C) for 5 min, extract juice.
  2. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  3. Add curry leaves, fry 15 sec.
  4. Add ginger and green chili, cook 1 min.
  5. Add tamarind juice, jaggery, asafoetida, water.
  6. Bring to simmer (150°C), cook 5 min stirring occasionally. Visual cue: Thick syrup-like consistency, brownish color, no liquid excess.
  7. Cool and add salt.
  8. Store in airtight container.
