👩🍳 How to make Tamarind Chutney
- Soak tamarind paste in warm water (60°C) for 5 min, extract juice.
- Heat oil (160°C), add mustard seeds (crackle 10 sec).
- Add curry leaves, fry 15 sec.
- Add ginger and green chili, cook 1 min.
- Add tamarind juice, jaggery, asafoetida, water.
- Bring to simmer (150°C), cook 5 min stirring occasionally. Visual cue: Thick syrup-like consistency, brownish color, no liquid excess.
- Cool and add salt.
- Store in airtight container.
