👩‍🍳 How to make Sweet Tapioca

  1. Drain soaked tapioca.
  2. Bring water to boil (medium-high, 180°C), add tapioca, cook 8 min stirring frequently until pearls become translucent.
  3. Add jaggery, stir until dissolved (1-2 min, sweet aroma).
  4. Add coconut milk and grated coconut, stir gently for 1 min.
  5. Reduce heat to low (150°C), simmer 1-2 min (should be thick, flowing consistency).
  6. Heat ghee separately, fry raisins for 30 sec until plump.
  7. Pour ghee and raisins into payasam. Crush cardamom and sprinkle over. Add salt.
  8. Visual cue: Thick pudding consistency, tapioca pearls translucent, sweet nutty aroma.
  9. Serve warm or cool.
