👩‍🍳 How to make Steamed Rice Noodles with Coconut Milk

  1. Mix rice flour, grated coconut, and salt.
  2. Heat water to 90°C, add to dry mixture gradually, stirring to form smooth dough.
  3. Add 40ml coconut milk, mix until pourable batter consistency.
  4. Pour into puttu kudam (bamboo or metal cylindrical mold).
  5. Steam in boiling water for 6-7 min (water level 2cm below rim).
  6. Push out onto plate immediately.
  7. Warm remaining coconut milk (60°C), pour over top with jaggery if using.
  8. Visual cue: Firm exterior, soft and steamy inside, pale golden.
  9. Serve warm.
