  1. Heat oil (160°C), add curry leaves (fry 20 sec).
  2. Add onion, cook 3 min until golden.
  3. Add ginger-garlic, cook 1 min.
  4. Add tomato, cook 2 min until mushy.
  5. Add spices (turmeric, chili, coriander), stir 30 sec.
  6. Add squid rings, cook 2 min stirring (should turn opaque, shrink slightly).
  7. Add grated coconut, stir for 1 min.
  8. Add water, simmer at low heat (150°C) for 8-10 min. Visual cue: Squid tender, curry creamy, no excessive liquid.
  9. Add salt.
  10. Serve with rice, pappadam, lime pickle.
