- Heat oil (160°C), add curry leaves (fry 20 sec).
- Add onion, cook 3 min until golden.
- Add ginger-garlic, cook 1 min.
- Add tomato, cook 2 min until mushy.
- Add spices (turmeric, chili, coriander), stir 30 sec.
- Add squid rings, cook 2 min stirring (should turn opaque, shrink slightly).
- Add grated coconut, stir for 1 min.
- Add water, simmer at low heat (150°C) for 8-10 min. Visual cue: Squid tender, curry creamy, no excessive liquid.
- Add salt.
- Serve with rice, pappadam, lime pickle.
