  1. Pat squid dry.
  2. Mix salt, chili, turmeric, ginger powder.
  3. Toss squid rings with spice mixture, let sit 2 min.
  4. Coat lightly with gram flour.
  5. Heat oil to 180°C.
  6. Fry squid in batches, 3-4 min until crispy and light golden. Visual cue: Crispy, curled rings, no moisture, golden color.
  7. Drain on paper.
  8. Cool and store in airtight container.
