  1. Dry roast sesame seeds (140°C) for 2 min, stirring frequently, until golden and fragrant.
  2. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  3. Add curry leaves, fry 15 sec.
  4. Add onion and green chili, cook 1 min.
  5. Add turmeric, stir 10 sec.
  6. Add roasted sesame seeds, stir for 30 sec (aroma nutty).
  7. Add rice, fold for 1 min. Add salt. Visual cue: Sesame seeds distributed, rice grains separate, nutty aroma strong.
  8. Serve hot.
