👩🍳 How to make Saffron Rice
- Rinse rice, add to pot with water (medium heat, 170°C).
- Bring to boil, cover, reduce to low (150°C), cook 10 min until rice is cooked and water absorbed.
- Heat ghee separately (160°C), fry cashews until golden (1 min), then raisins (30 sec), remove both.
- Pour saffron milk (with soaking liquid) over rice, fold gently.
- Add fried cashews and raisins, crush cardamom and sprinkle over.
- Add salt, mix gently. Visual cue: Golden-yellow rice grains, nuts visible, saffron aroma, no lumps.
- Serve warm.
