👩‍🍳 How to make Saffron Rice

  1. Rinse rice, add to pot with water (medium heat, 170°C).
  2. Bring to boil, cover, reduce to low (150°C), cook 10 min until rice is cooked and water absorbed.
  3. Heat ghee separately (160°C), fry cashews until golden (1 min), then raisins (30 sec), remove both.
  4. Pour saffron milk (with soaking liquid) over rice, fold gently.
  5. Add fried cashews and raisins, crush cardamom and sprinkle over.
  6. Add salt, mix gently. Visual cue: Golden-yellow rice grains, nuts visible, saffron aroma, no lumps.
  7. Serve warm.
