👩‍🍳 How to make Rice Appam

  1. Soak rice for 2 hours (or use 1-hour soak with ground rice).
  2. Grind soaked rice with grated coconut and 60ml water to fine smooth batter (grainy texture ok).
  3. Mix in jaggery, salt, and cardamom powder. Batter should be like thin dosa batter.
  4. Heat appam pan or flat griddle (200°C) until hot.
  5. Oil griddle lightly (2ml).
  6. Pour batter (2-3 tbsp) into center, spread gently to 20cm circle with ladle back (optional, can be thick too).
  7. Cook 2 min first side until bottom sets (edges will curl), flip.
  8. Cook 1.5 min second side until light golden. Visual cue: Edges curl up slightly, soft spongy interior.
  9. Serve warm, preferably rolled with jaggery or with curry.
