👩🍳 How to make Rice Appam
- Soak rice for 2 hours (or use 1-hour soak with ground rice).
- Grind soaked rice with grated coconut and 60ml water to fine smooth batter (grainy texture ok).
- Mix in jaggery, salt, and cardamom powder. Batter should be like thin dosa batter.
- Heat appam pan or flat griddle (200°C) until hot.
- Oil griddle lightly (2ml).
- Pour batter (2-3 tbsp) into center, spread gently to 20cm circle with ladle back (optional, can be thick too).
- Cook 2 min first side until bottom sets (edges will curl), flip.
- Cook 1.5 min second side until light golden. Visual cue: Edges curl up slightly, soft spongy interior.
- Serve warm, preferably rolled with jaggery or with curry.
