👩‍🍳 How to make Ragi Porridge

  1. Boil water (medium-high heat, 180°C).
  2. Mix ragi flour with 50ml cold water to smooth paste (no lumps).
  3. Slowly pour paste into boiling water, stirring constantly to prevent lumps (1 min).
  4. Reduce to low (150°C), stir frequently for 8 min (porridge should thicken).
  5. Add jaggery, stir until dissolved (1 min, sweet aroma).
  6. Add coconut milk, stir gently (1 min, creamy color).
  7. Crush cardamom, add. Add salt.
  8. Heat ghee separately, fry raisins for 30 sec.
  9. Pour ghee and raisins into porridge. Visual cue: Thick creamy consistency, reddish-brown color, sweet aroma.
  10. Serve warm in bowl.
