  1. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  2. Add curry leaves, fry 15 sec.
  3. Add onion and green chili, cook 1 min.
  4. Add turmeric, stir 10 sec.
  5. Add grated radish, cook 1.5 min (should soften, peppery aroma rise).
  6. Add rice, fold for 1 min. Add salt. Visual cue: Radish distributed, rice grains separate, slight peppery-pungent aroma.
  7. Serve hot.
