- Marinate prawns with turmeric, chili, salt, ginger-garlic, lemon juice for 5 min.
- Mix gram flour and rice flour.
- Coat prawn in flour mixture.
- Heat oil to 180°C.
- Fry prawns in batches, 2-3 min until golden and crispy. Visual cue: Golden exterior, firm when pressed, no translucent appearance.
- Add curry leaves during last 30 sec.
- Drain on paper.
- Serve hot with lime and onion.
