👩‍🍳 How to make Pongal

  1. Rinse rice, add to pot with water (medium heat, 180°C).
  2. Bring to boil, reduce to low (150°C), cook 12 min until rice is soft but grains visible.
  3. Add jaggery, stir until dissolved (1 min, caramel aroma).
  4. Add grated coconut, stir for 1 min.
  5. Heat ghee separately (160°C), fry cashews until golden (1 min), then raisins (30 sec).
  6. Pour ghee, nuts, raisins into rice. Crush cardamom, sprinkle over.
  7. Mix gently for 1 min. Add salt to taste.
  8. Visual cue: Golden-brown color, sweet aroma, grains still distinct.
  9. Serve warm, preferably in earthen pot (traditional).
