👩🍳 How to make Pongal
- Rinse rice, add to pot with water (medium heat, 180°C).
- Bring to boil, reduce to low (150°C), cook 12 min until rice is soft but grains visible.
- Add jaggery, stir until dissolved (1 min, caramel aroma).
- Add grated coconut, stir for 1 min.
- Heat ghee separately (160°C), fry cashews until golden (1 min), then raisins (30 sec).
- Pour ghee, nuts, raisins into rice. Crush cardamom, sprinkle over.
- Mix gently for 1 min. Add salt to taste.
- Visual cue: Golden-brown color, sweet aroma, grains still distinct.
- Serve warm, preferably in earthen pot (traditional).
