- Make paste of turmeric, chili powder, salt, ginger-garlic, and lemon juice.
- Apply paste evenly all over fish (inside and outside), let sit 5 min.
- Heat oil (180°C) in pan suitable for fish.
- Gently place fish in hot oil, fry 2.5-3 min per side (oil should be hot enough to hear sizzle immediately). Visual cue: Exterior golden-brown, crispy at edges, fish flakes easily.
- Add curry leaves during last 30 sec of cooking.
- Drain on paper.
- Serve hot with farata or rice.
