  1. Combine pineapple and rice in pot with coconut milk (medium heat, 160°C).
  2. Bring to simmer (150°C), cook 5 min stirring gently.
  3. Add jaggery, stir until dissolved (1-2 min, sweet tangy aroma). Visual cue: Creamy consistency, pineapple soft, golden color, tangy-sweet aroma.
  4. Cook 2 min more.
  5. Crush cardamom, add.
  6. Heat ghee, fry cashews until golden (1 min), raisins (30 sec).
  7. Add with salt.
  8. Serve warm or chilled.
