- Combine pineapple and rice in pot with coconut milk (medium heat, 160°C).
- Bring to simmer (150°C), cook 5 min stirring gently.
- Add jaggery, stir until dissolved (1-2 min, sweet tangy aroma). Visual cue: Creamy consistency, pineapple soft, golden color, tangy-sweet aroma.
- Cook 2 min more.
- Crush cardamom, add.
- Heat ghee, fry cashews until golden (1 min), raisins (30 sec).
