  1. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  2. Add curry leaves, fry 15 sec.
  3. Add onion and green chili, cook 1.5 min until soft.
  4. Add turmeric, stir 15 sec.
  5. Add grated papaya, cook 1.5 min (papaya should soften slightly).
  6. Add rice, toss for 1.5 min. Add salt and lemon juice.
  7. Visual cue: Papaya tender, rice grains separate, slight sweetness in aroma.
  8. Serve hot.
