- Heat oil (160°C), add mustard seeds (crackle 10 sec).
- Add curry leaves, fry 15 sec.
- Add onion and green chili, cook 1.5 min until soft.
- Add turmeric, stir 15 sec.
- Add grated papaya, cook 1.5 min (papaya should soften slightly).
- Add rice, toss for 1.5 min. Add salt and lemon juice.
- Visual cue: Papaya tender, rice grains separate, slight sweetness in aroma.
- Serve hot.
