- Combine papaya and cooked rice in pot with coconut milk (medium heat, 160°C).
- Bring to simmer (150°C), cook 5 min stirring gently.
- Add jaggery, stir until dissolved (1 min, sweet fruity aroma).
- Cook 2 min more. Visual cue: Papaya pieces soft, creamy consistency, golden color.
- Crush cardamom, add.
- Heat ghee, fry cashews until golden (1 min), raisins (30 sec).
- Add with salt.
- Serve warm or chilled.
