  1. Combine papaya and cooked rice in pot with coconut milk (medium heat, 160°C).
  2. Bring to simmer (150°C), cook 5 min stirring gently.
  3. Add jaggery, stir until dissolved (1 min, sweet fruity aroma).
  4. Cook 2 min more. Visual cue: Papaya pieces soft, creamy consistency, golden color.
  5. Crush cardamom, add.
  6. Heat ghee, fry cashews until golden (1 min), raisins (30 sec).
  7. Add with salt.
  8. Serve warm or chilled.
