- Heat oil (160°C), add curry leaves (fry 18 sec).
- Add onion, cook 3 min until golden.
- Add ginger-garlic, cook 1 min.
- Add tomato, cook 1.5 min until soft.
- Add turmeric, chili, coriander, stir 30 sec.
- Add octopus pieces, cook 2 min stirring (should turn opaque).
- Add grated coconut, stir 1 min.
- Add water, bring to low simmer (150°C), cook 10-12 min until octopus is tender. Visual cue: Octopus tender and cooked through, curry creamy.
- Add lemon juice and salt.
- Serve with rice and side dishes.
