👩‍🍳 How to make Millet Upma

  1. Dry roast millet (160°C) for 2 min, stirring occasionally (should smell nutty).
  2. Heat oil (160°C), add curry leaves (fry 15 sec).
  3. Add onion, cook 1 min.
  4. Add green chili, cook 15 sec.
  5. Add turmeric, stir 10 sec.
  6. Add roasted millet, stir for 1 min (all grains coat with oil).
  7. Slowly pour water while stirring (prevent lumps).
  8. Reduce heat to medium (170°C), stir frequently, cook 5-6 min until water absorbed and millet becomes fluffy. Visual cue: Grains swell and separate, no liquid remains.
  9. Add salt, toss once.
  10. Serve hot.
