  1. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  2. Add curry leaves, fry 15 sec until fragrant.
  3. Add onion, cook 1.5 min until translucent.
  4. Add green chili and turmeric, stir for 20 sec.
  5. Add grated mango, cook 1 min (should soften, release sour aroma).
  6. Add cooked rice, toss gently for 2 min until evenly mixed.
  7. Add salt, mix once. Visual cue: Mango strands distributed, rice grains separate, tangy aroma.
  8. Serve hot.
