- Heat oil (160°C), add mustard seeds (crackle 10 sec).
- Add curry leaves, fry 15 sec until fragrant.
- Add onion, cook 1.5 min until translucent.
- Add green chili and turmeric, stir for 20 sec.
- Add grated mango, cook 1 min (should soften, release sour aroma).
- Add cooked rice, toss gently for 2 min until evenly mixed.
