- Boil mashed mango with rice and coconut milk (medium heat, 170°C).
- Bring to simmer, reduce to low (150°C), cook 5 min stirring occasionally.
- Add jaggery, stir until dissolved (sweet and fruity aroma).
- Cook 2 min more. Visual cue: Thick creamy consistency, mango color visible, smooth texture.
- Crush cardamom, add.
- Heat ghee, fry cashews until golden (1 min), then raisins (30 sec).
- Add to payasam with salt.
- Serve warm or chilled.
