  1. Boil mashed mango with rice and coconut milk (medium heat, 170°C).
  2. Bring to simmer, reduce to low (150°C), cook 5 min stirring occasionally.
  3. Add jaggery, stir until dissolved (sweet and fruity aroma).
  4. Cook 2 min more. Visual cue: Thick creamy consistency, mango color visible, smooth texture.
  5. Crush cardamom, add.
  6. Heat ghee, fry cashews until golden (1 min), then raisins (30 sec).
  7. Add to payasam with salt.
  8. Serve warm or chilled.
