👩‍🍳 How to make Jaggery and Coconut Barfi

  1. Heat ghee (160°C), add jaggery (powdered), stir until melted (1-2 min).
  2. Add grated coconut, stir constantly for 4-5 min until mixture turns golden and pulls away from pan sides (no raw coconut smell). Visual cue: Golden color, aromatic toasty smell, mixture holds together.
  3. Remove from heat, add cardamom, cashews, raisins, salt.
  4. Pour onto parchment-lined pan, level to 1cm thickness using spatula.
  5. Cool completely (at least 2 hours).
  6. Cut into 2cm squares.
  7. Store in airtight container.
