👩🍳 How to make Jackfruit Halwa
- Boil diced jackfruit with minimal water until very soft (5 min on medium heat, 170°C).
- Mash cooked jackfruit to smooth paste (use fork or blender).
- Heat ghee in pan (160°C), add mashed jackfruit, stir frequently for 8-10 min until halwa pulls away from pan sides and becomes golden. Visual cue: Golden color, no liquid, aromatic, thick paste consistency.
- Add jaggery (powdered), stir until incorporated (1 min).
- Add cardamom, cashews, raisins, salt.
- Pour into parchment-lined pan, level to 1cm thickness.
- Cool completely (2 hours).
- Cut into 2cm squares.
- Store in airtight container.
