👩‍🍳 How to make Jackfruit Halwa

  1. Boil diced jackfruit with minimal water until very soft (5 min on medium heat, 170°C).
  2. Mash cooked jackfruit to smooth paste (use fork or blender).
  3. Heat ghee in pan (160°C), add mashed jackfruit, stir frequently for 8-10 min until halwa pulls away from pan sides and becomes golden. Visual cue: Golden color, no liquid, aromatic, thick paste consistency.
  4. Add jaggery (powdered), stir until incorporated (1 min).
  5. Add cardamom, cashews, raisins, salt.
  6. Pour into parchment-lined pan, level to 1cm thickness.
  7. Cool completely (2 hours).
  8. Cut into 2cm squares.
  9. Store in airtight container.
