- Mix yogurt, ginger-garlic, turmeric, chili, lemon juice, salt.
- Apply to squid pieces (inside and outside), marinate 5 min.
- Heat griddle (200°C) until hot.
- Oil lightly (3ml).
- Place squid pieces on griddle, cook 3-4 min per side (shouldn't stick). Visual cue: Exterior golden-brown with light char, interior tender but not rubbery.
- Add curry leaves during last 30 sec.
- Serve hot with lime and onion slices.
