- Heat oil (160°C), add mustard seeds (crackle 10 sec).
- Add urad dal, fry 15 sec until golden.
- Add curry leaves, fry 10 sec.
- Add onion and green chili, cook 1.5 min until soft.
- Add fish powder, stir constantly for 1 min (should smell aromatic, not fishy-strong).
- Add rice, toss for 2 min until all grains coated. Add salt and lemon juice.
- Visual cue: Rice grains separate, fish powder distributed evenly, light fish aroma.
