  1. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  2. Add urad dal, fry 15 sec until golden.
  3. Add curry leaves, fry 10 sec.
  4. Add onion and green chili, cook 1.5 min until soft.
  5. Add fish powder, stir constantly for 1 min (should smell aromatic, not fishy-strong).
  6. Add rice, toss for 2 min until all grains coated. Add salt and lemon juice.
  7. Visual cue: Rice grains separate, fish powder distributed evenly, light fish aroma.
  8. Serve hot.
