  1. Mix turmeric, chili, salt, ginger-garlic, lemon juice to paste.
  2. Apply to fish, marinate 5 min.
  3. Heat oil (180°C), fry fish 3-4 min per side until golden. Visual cue: Exterior golden-brown, flakes easily.
  4. Heat oil (160°C), add mustard seeds (crackle 15 sec).
  5. Add curry leaves, fry 15 sec.
  6. Add onion, cook 1.5 min.
  7. Add turmeric and chili, stir 20 sec.
  8. Add okra, cook 4-5 min stirring frequently (okra should become crispy and tender). Visual cue: Okra dry and slightly curled, no sliminess.
  9. Add tomato, cook 1 min. Add salt.
  10. Place rice on plate.
  11. Arrange fried fish.
  12. Add vegetable side.
