  1. Mix fish, potato, onion, green chili, ginger-garlic, and salt in bowl.
  2. Add gram flour to bind (should hold shape).
  3. Divide into 2-3 patties, flatten slightly.
  4. Coat lightly with flour (1-2mm).
  5. Heat oil (180°C) in shallow pan.
  6. Fry cutlets 3-4 min per side until edges crisp and light golden. Visual cue: Exterior golden-brown, slight char on edges, firm to touch.
  7. Drain on paper.
  8. Serve with tamarind chutney or lime juice.
