- Mix fish, potato, onion, green chili, ginger-garlic, and salt in bowl.
- Add gram flour to bind (should hold shape).
- Divide into 2-3 patties, flatten slightly.
- Coat lightly with flour (1-2mm).
- Heat oil (180°C) in shallow pan.
- Fry cutlets 3-4 min per side until edges crisp and light golden. Visual cue: Exterior golden-brown, slight char on edges, firm to touch.
