- Beat eggs lightly with salt and pepper.
- Heat oil (170°C), add onion for 1 min.
- Add turmeric and chili powder, stir 15 sec.
- Add green peas, cook 1 min (should be warm).
- Push ingredients to pan sides, pour beaten eggs into center, cook 1 min stirring to scramble.
- When eggs are mostly cooked, add rice, toss for 2 min until evenly mixed. Visual cue: Eggs cooked through, rice grains separate, peas distributed.
- Serve hot.
