  1. Heat oil (160°C), sauté onion for 1.5 min until soft.
  2. Add tomato, cook 2 min until mushy (color darkens, aroma sour).
  3. Add turmeric and chili powder, stir for 30 sec.
  4. Add water, simmer for 2 min.
  5. Add egg halves, gentle roll to coat (1 min).
  6. Add curry leaves, cook 30 sec.
  7. Mix in rice, toss for 1-2 min. Season with salt.
  8. Visual cue: Curried eggs throughout rice, sauce lightly coating grains.
  9. Serve hot.
