- Heat oil (160°C), sauté onion for 1.5 min until soft.
- Add tomato, cook 2 min until mushy (color darkens, aroma sour).
- Add turmeric and chili powder, stir for 30 sec.
- Add water, simmer for 2 min.
- Add egg halves, gentle roll to coat (1 min).
- Add curry leaves, cook 30 sec.
- Mix in rice, toss for 1-2 min. Season with salt.
- Visual cue: Curried eggs throughout rice, sauce lightly coating grains.
- Serve hot.
