- Heat oil (160°C), add curry leaves (fry 18 sec).
- Add onion, cook 2.5 min until soft and golden.
- Add ginger-garlic, cook 45 sec.
- Add tomato, cook 1.5 min until soft.
- Add turmeric, chili, coriander, stir 30 sec.
- Add grated coconut, stir 1 min.
- Add water, bring to simmer (150°C), cook 4 min.
- Gently add egg halves, roll to coat with curry (1 min). Visual cue: Curry creamy and medium-thick, eggs coated.
- Add salt to taste.
- Simmer 2 min more.
- Serve over rice with pappadam.
