- Heat oil (160°C), add curry leaves (fry 15 sec).
- Add onion, cook 1.5 min.
- Add ginger-garlic, cook 35 sec.
- Add tomato, cook 1 min.
- Add turmeric, chili, coriander, stir 25 sec.
- Add crab pieces, cook 2 min stirring (shell color brightens).
- Add grated coconut, stir 45 sec.
- Add water, simmer 5-6 min on low (150°C). Visual cue: Crab tender, curry thin-medium, flavors light.
- Add lemon juice and salt.
- Serve hot.
