- Heat oil (160°C), add curry leaves (fry 20 sec).
- Add onion, cook 3 min until golden.
- Add ginger-garlic, cook 1 min.
- Add tomato, cook 2 min until mushy.
- Add turmeric, chili, coriander, stir 30 sec.
- Add crab pieces, cook 2.5 min stirring (crab color brightens, shell turns red/orange).
- Add grated coconut, stir 1 min.
- Add water, bring to low simmer (150°C), cook 10 min. Visual cue: Crab meat tender and opaque, curry creamy, no liquid excess.
- Add lemon juice and salt.
- Serve with rice, pappadam, and side vegetables.
