  1. Heat coconut oil in a pan (medium heat, 160°C) for 1 min.
  2. Add mustard seeds (they crackle loudly, ~10 sec).
  3. Add curry leaves and green chili, fry for 15 sec until fragrant.
  4. Add grated coconut, stir-fry for 1 min until warm.
  5. Add cooked rice, mix gently for 2-3 min until all grains are coated.
  6. Add salt, toss once. Visual cue: All grains glossy, coconut warm.
  7. Serve immediately.
