- Heat coconut oil in a pan (medium heat, 160°C) for 1 min.
- Add mustard seeds (they crackle loudly, ~10 sec).
- Add curry leaves and green chili, fry for 15 sec until fragrant.
- Add grated coconut, stir-fry for 1 min until warm.
- Add cooked rice, mix gently for 2-3 min until all grains are coated.
- Add salt, toss once. Visual cue: All grains glossy, coconut warm.
- Serve immediately.
