  1. Mix rice flour, urad dal flour, grated coconut, salt, turmeric, green chili, cumin seeds.
  2. Add coconut oil, rub with fingers to combine (should resemble breadcrumbs).
  3. Add water gradually, knead to soft dough (not sticky).
  4. Fill murukku press (nut and bolt machine) with dough.
  5. Heat oil to 170°C.
  6. Press dough directly into hot oil in spiral shape, fry 3-4 min per batch. Visual cue: Golden color, crispy, no soft spots.
  7. Drain on paper.
  8. Store in airtight container.
