👩‍🍳 How to make Coconut Milk Rice Pudding

  1. Rinse rice.
  2. Add rice and water to pot (medium-high heat, 180°C), bring to boil.
  3. Reduce to low (150°C), simmer 10 min until rice is soft and water mostly absorbed.
  4. Add coconut milk slowly, stir gently (1 min).
  5. Add jaggery, stir until dissolved (1-2 min, aroma sweet and creamy).
  6. Crush cardamom, add to rice.
  7. Heat ghee separately (160°C), fry raisins for 30 sec until plump.
  8. Pour ghee and raisins into rice, fold gently. Add salt.
  9. Remove from heat, cover for 2 min. Visual cue: Creamy consistency, rice grains tender, golden color.
  10. Serve warm.
