👩🍳 How to make Coconut Milk Rice Pudding
- Rinse rice.
- Add rice and water to pot (medium-high heat, 180°C), bring to boil.
- Reduce to low (150°C), simmer 10 min until rice is soft and water mostly absorbed.
- Add coconut milk slowly, stir gently (1 min).
- Add jaggery, stir until dissolved (1-2 min, aroma sweet and creamy).
- Crush cardamom, add to rice.
- Heat ghee separately (160°C), fry raisins for 30 sec until plump.
- Pour ghee and raisins into rice, fold gently. Add salt.
- Remove from heat, cover for 2 min. Visual cue: Creamy consistency, rice grains tender, golden color.
- Serve warm.
