  1. Add cooked rice to pot with coconut milk (medium-high heat, 170°C).
  2. Bring to boil, reduce to low (150°C).
  3. Add jaggery, stir until dissolved (1 min, sweet aroma).
  4. Simmer 5 min, stirring occasionally. Visual cue: Rice grains tender, coconut milk coats back of spoon, creamy consistency.
  5. Crush cardamom, add.
  6. Heat ghee separately (160°C), fry cashews until golden (1 min), then raisins (30 sec).
  7. Add to pudding, mix gently. Add salt.
  8. Remove from heat, cover for 2 min to let flavors set. Visual cue: Creamy pudding, golden color, sweet aroma.
  9. Serve warm.
