- Mix grated coconut, jaggery (powdered), green chili, ginger, cardamom, salt.
- Add gram flour and rice flour, mix well.
- Add water to bind (mixture should hold shape).
- Divide into 12-14 portions, shape into round balls.
- Heat oil to 170°C.
- Fry balls in batches, 3-4 min per batch, rolling occasionally until golden-brown. Visual cue: Golden exterior, crispy, no greasy feel.
- Drain on paper.
- Serve hot or at room temperature.
