- Heat oil (160°C), add curry leaves and green chili (fry 15 sec).
- Add onion, cook 1.5 min until soft.
- Add ginger, cook 30 sec.
- Add tomato, cook 1 min until soft.
- Add turmeric and chili powder, stir 25 sec.
- Add mackerel pieces, cook 1.5 min (turns opaque).
- Add water, simmer 3 min on low (150°C).
- Add coconut milk carefully, fold gently, simmer 2 min. Visual cue: Fish tender, curry creamy but light, not heavy.
- Add salt.
- Serve hot with steamed rice.
