  1. Combine coconut, green chili, ginger, lemon juice, salt, curry leaves.
  2. Add water, grind to coarse paste using mortar or blender (5-10 sec pulses, should be chunky not smooth).
  3. Heat oil (160°C), add mustard seeds (crackle 10 sec).
  4. Pour tempered oil and seeds into chutney, mix well. Visual cue: Coarse paste, light greenish color, coconut chunks visible.
  5. Serve immediately or store for 2 hours (best fresh).
