👩🍳 How to make Clam Curry
- Heat oil (160°C), add curry leaves (fry 18 sec).
- Add onion, cook 2.5 min until soft.
- Add ginger-garlic, cook 45 sec.
- Add tomato, cook 1.5 min until soft.
- Add turmeric, chili, coriander, stir 30 sec.
- Add clams, cook 2 min stirring to coat (shells begin opening).
- Add grated coconut, stir 1 min.
- Add water, bring to low simmer (150°C), cook 5-6 min (clams will open). Visual cue: Clam shells open, meat opaque, curry creamy.
- Add lemon juice and salt.
- Discard unopened shells.
- Serve over rice with sides.
