- Heat oil (160°C), add curry leaves (fry 15 sec).
- Add onion, cook 1.5 min until golden.
- Add tomato, cook 2 min until mushy (color darkens, juices release).
- Add turmeric, chili, and coriander powder, stir 30 sec.
- Add tuna pieces, cook 2 min stirring gently (fish should turn opaque).
- Add water, simmer 2 min (gravy should be thin to medium consistency).
- Add salt, cook 30 sec more.
- Pour over cooked rice in bowl. Visual cue: Tuna flakes easily, gravy light-colored, fish cooked through.
- Mix well and serve hot.
