  1. Heat oil (160°C), add curry leaves (fry 15 sec).
  2. Add onion, cook 1.5 min until golden.
  3. Add tomato, cook 2 min until mushy (color darkens, juices release).
  4. Add turmeric, chili, and coriander powder, stir 30 sec.
  5. Add tuna pieces, cook 2 min stirring gently (fish should turn opaque).
  6. Add water, simmer 2 min (gravy should be thin to medium consistency).
  7. Add salt, cook 30 sec more.
  8. Pour over cooked rice in bowl. Visual cue: Tuna flakes easily, gravy light-colored, fish cooked through.
  9. Mix well and serve hot.
