👩🍳 How to make Black Rice
- Rinse black rice (will leak color).
- Add to pot with water (medium heat, 170°C), bring to boil.
- Reduce to low (150°C), cover, simmer 12-13 min until rice cooked and water absorbed.
- Add jaggery, stir until dissolved (1 min).
- Add coconut milk, stir gently (1 min, creamy purple color).
- Heat ghee separately (160°C), fry raisins for 30 sec until plump.
- Pour ghee and raisins into rice. Crush cardamom and sprinkle. Add salt.
- Visual cue: Dark purple color, creamy texture, rice grains tender, sweet aroma.
- Serve warm.
