👩‍🍳 How to make Black Rice

  1. Rinse black rice (will leak color).
  2. Add to pot with water (medium heat, 170°C), bring to boil.
  3. Reduce to low (150°C), cover, simmer 12-13 min until rice cooked and water absorbed.
  4. Add jaggery, stir until dissolved (1 min).
  5. Add coconut milk, stir gently (1 min, creamy purple color).
  6. Heat ghee separately (160°C), fry raisins for 30 sec until plump.
  7. Pour ghee and raisins into rice. Crush cardamom and sprinkle. Add salt.
  8. Visual cue: Dark purple color, creamy texture, rice grains tender, sweet aroma.
  9. Serve warm.
