  1. Drain soaked bitter gourd slices, squeeze out excess water.
  2. Heat oil (170°C), add mustard seeds (crackle 10 sec).
  3. Add curry leaves, fry 15 sec.
  4. Add onion, cook 1 min.
  5. Add bitter gourd slices, cook 3-4 min stirring occasionally until crispy at edges and bitter taste reduces.
  6. Add turmeric and chili powder, stir for 20 sec.
  7. Add rice, fold for 1 min. Add salt. Visual cue: Bitter gourd edges crispy, rice grains separate, slight bitter-spicy aroma balanced.
